who offers the best disk brake conversion for my 65 vair

I would check out Corvair underground and compare to Clark's.

The best will most likely be something you put together yourself. Go with the scarebird brackets and you have your choice of s10 rotors and calipers. The brackets come with instructions on what year of s10 parts to use. With the kits you are stuck with what they give you. Piecing together a kit will cost less(going with the same components the kits come with) and give you options for upgraded drilled/slotted rotors, wilwood calipers, stainless hoses, etc. if you want added performance.
