That 60 is going to be vairy cool. What wheels are you going with, and are you sticking with the 4 lug pattern or 5 lug swap? Installing the LM front suspension will be nice because of increased adjustability. 3-4 degrees of positive caster will really help with directional stability as well as planting the car in a corner.
The wood accents on dash will look classy with the red leather interior. I dabbed my dash panels out of stainless. Removed the radio as I love the sound of my car. The only music I need. When I do need music I just bring along a bluetooth speaker.

I powder coated a set a 15x7 Scott drake wheels left the center spinner chrome

I like the black powder coat with the contrast of the spinner. I have been thinking of going to a 15 wheel as well. The Silverstone wheels from VTO. I'm not in big hurry because I like the 13 inch Ansen Sprints. Its hard to find tires these days in 13" the 15" diameter gives you alot more options.

15s have more options but still very limited. I had to go with 17s to have a good selection.

I cannot tell for sure in this photo, but if the clearance is too tight for changing fan belts, the 1964 bracket might help...

There are some variations in the rear engine mount bracket, as shown below. The original Early Model bracket was very close to the crankshaft pulley. When the crankshaft pulley changed to a harmonic balancer in 1964, the added thickness of the harmonic balancer was so close to the bracket that a fan belt could not be mounted. The shape of the engine mount bracket was changed to provide for more clearance. This new shape was retained in the new two-hole design introduced in 1965. The added clearance was also needed for air conditioning or smog pump crankshaft pulleys.
