Trouble keeping it going

So I’ve been having this problem and my uncle has been helping but at this point we’re stumped
I have a 60 with a powerglide transmission

The car turns no problem. Replaced most if not all smaller components of engine..distributor cap, points, plugs, vacuum advance. Rebuilt carbs, new battery, proper gaps etc. got everything dialed in and when we took it out for the test drive it died immediately hitting the street. Turned it back over gave it gas and it took off. Drove around a bit smelled a little rich but everything sounded good. I then came to a stop sign and it had trouble accelerating. Not immediately but after a second or two of starting to drive away normally, it’ll start sound like its choking itself out. And if I give it more gas Like bounce on the accelerator it’ll drive but if I give it too much it’ll die.

Any help where I can go from here will be greatly appreciated>
