From a simple production standpoint, the 1965's are the most plentiful and usually the most moderately priced. The Late Models (65-69) seem to be the easiest to find good used parts for, but almost anything needed, for any year Corvair, can be ordered from Clarks or one of the other excellent vendor...

The ones in the pictures that Brad posted are Sebring seats that have had the headrests resculptured.

You can lower the rear of an EM as far as you want and still maintain proper camber if you raise the engine to compensate. I've heard of it being done but it took lot more work than just cutting coils.

This has been said before but... The 2 spd Corvair Powerglide is one of the toughest automatic transmissions out there.
